Can I edit a built-in exercise?

You can't edit the built-in ones, but you can create a custom version configured however you want.

What if I use different names for exercises?

Create a custom exercise with whatever name you prefer. The built-in is "Bench Press (Barbell)" but you could make one called just "Bench"—it's up to you.
